The Best Vegan Pancakes


The search is over! If you've never tried to find the perfect vegan pancake recipe after years and years of enjoying the fluffiness that eggs bring to the party, let me tell you, it's a long journey ... And I've reached the destination thanks to this (Swedish) recipe. According to these hungry Swedes, what you need for 2 (big!) portions is:

  • 4 dl flour

  • 3 dl oat milk

  • 1 tbsp sugar

  • 1 tbsp baking powder

  • 1 tbsp vanilla sugar (or regular sugar with a few drops of vanilla extract)

  • Milk-free butter for frying

  • Topping


Instructions:

  1. Mix together the dry ingredients in a bowl

  2. Mix in the oat milk a little at a time until you have a smooth batter

  3. Pour small amount of the batter in a pan with lots of butter and fry on both sides.

  4. Add topping and enjoy!


Because I have a hard time following recipes (and because I didn't have all the ingredients at home) I can offer a slightly different adaptation that worked just as well: You can skip the sugar as well as the vanilla sugar (which could very well be a Swedish phenomenon) and blend in a mashed ripe banana & add some extra flavours such as half a teaspoon of cinnamon or cardamom powder.


Another tip is to fry the pancakes on a lower than regular heat so that they have time to bake all the way through without burning the outsides.


Top with banana, maple syrup and chocolate flakes, or why not with date syrup and berries?
