Swedish Apple Pie Recipe

If you want to make yourself (or your mum!) as happy as mine looks on the picture below, scroll on down for a quick and easy cake recipe you won't regret making.

To make Gunnels Äppelkaka shared by my friend Jenny,

you’ll need

2 eggs

3 dl sugar

4 dl flour

1,5 dl milk

100g butter

2 tsp baking powder

& some cinnamon & pearl sugar for garnishing

Beat the eggs and the sugar until you get a fluffy white mixture.

Melt the butter, pour the milk in, let cool somewhat.

Mix the flour with the baking powder and mix everything together with a handheld mixer.

Line an oven tray (or the biggest oven-safe receptacle you can find) with baking paper and pour the mixture into it.

Cut some apple slices over the top, sprinkle over cinnamon & pearl sugar & pop the tray in the oven for 15-20 min.

Et voilà!

PS: You can really easily make the recipe dairy-free - I've made it with vegan baking "butter" & oat milk as substitutes which worked perfectly.

Best enjoyed on a terrace of a treehouse with some Koffie Kàn coffee. :) Photos below by my dear friend Marie-Alix de Haro
